Chick Pea & Tomato Salad
Are you getting bored eating brown rice and quinoa?  Need a little something different?  This is going to be perfect for you!
It is quick, easy and low fat, full of vitamins and minerals and a great way to get your veggies in at the same time.
I made this and put it on top of lettuce and added some organic grilled chicken for a full meal.  But it works great as a side dish too.
Make a large bowl for your next BBQ or family dinner.  
Spice & Vinegar
Ingredients:
1 Can Chick Peas
1 Large Tomato, chopped
1 Handfull Spinach
1 Cup Steamed Broccoli or any veggie you have on hand
1 to 2 tbsp. Flavored Vinegar
1/2 Lemon juiced
1 Pinch Celtic Sea Salt
Seasoning to taste
Directions:
Combine all the ingredients in a large bowl, mix, let it sit and rest about 5 minutes and serve or chill for later in fridge.
Here I added sliced grilled chicken that I made on the George Foreman Grill and made it a meal!  Enjoy.
